Crispy smashed broccoli topped with melted Semi Soft Serra cheese and finished with your favourite dip. A simple, flavour-packed side or appetizer that turns everyday broccoli into something irresistible.
INGREDIENTS:
- 3 cups broccoli florets - from about 2 small crowns.
- 3 tablespoons extra virgin olive oil
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon salt
- ½ cup shredded cheese (Semi Soft Serra)
- Dip your favourite sauce (I use truffle aioli!)
Preparation:
-
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
-
Boil/Cook the broccoli
Bring a pot of salted water to a boil. Add broccoli florets and boil for 8–10 minutes, until very tender (you want them soft enough to smash easily).
Drain well and let dry for a minute, you can even user paper towel to speed up the drying.
-
Smash it & Cheese it
Sprinkle a layer of shredded cheese onto the baking sheet where the broccoli will be placed. Add the broccoli florets on top, leaving a bit of space between each one. Use the bottom of a glass or measuring cup to gently smash each floret flat, then sprinkle more shredded cheese over the top.
-
Season
Drizzle evenly with olive oil. Sprinkle with salt and black pepper.
-
Bake
Bake for 18–22 minutes, until the edges of the cheese are golden and crispy. Keep an eye on it to achieve your desired level of browning.
Optional finishing touch (if you want):
Broil for 1–2 minutes for extra crispiness - keep an eye on it!
Add your favorite dip, and enjoy!
