Summer Peach and Tomato Salad with Queso Fresco and Prosciutto

Ingredients

  • 2 ripe peaches, sliced into wedges
  • 2 fresh tomatoes, halved
  • Queso Fresco
  • Fresh basil leaves
  • Pack of fresh prosciutto
  • 2 tbsp extra virgin olive oil
  • 1 tbsp raspberry vinaigrette
  • Flaky sea salt and freshly ground black pepper, to taste

Preparation

  • Prep the Produce:
    • Wash and slice the peaches and Tomatoes into thin wedges.
  • Assemble the Salad:
    • Arrange the peaches and tomatoes directly on the plate.
    • Tear the Queso Fresco gently and place chunks evenly across the salad.
    • Place pieces of fresh prosciutto across the salad.
    • Scatter fresh basil leaves on top.
  • Dress It Up:
    • Drizzle olive oil and raspberry vinaigrette over the salad.
    • Season with flaky salt.
  • Serve:
    • Serve immediately and enjoy!
