No-Carb Grilled Cheese Sandwich with Queso Mexicano, Avocado & Tomato

Ingredients:

  • Queso Mexicano cheese, sliced
  • 1 ripe avocado
  • 4 slices of crispy bacon
  • 1 large tomato, sliced
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • Salt & black pepper to taste
  • Handful of arugula or baby spinach (optional)

Instructions:

  1. Prep the ingredients::
    • Heat a pan over medium heat
    • Slice avocado and tomato.
  2. Grill the Cheese:
    • Heat a grill pan or non-stick skillet over medium-high heat.
    • Brush Queso Mexicano slices with olive oil and grill for 2-3 minutes per side until golden brown.
    • Remove from heat.
  3. Assemble the Sandwich:
    • Put grilled Queso slice, tomato slices, avocado and arugula/spinach.
    • Drizzle balsamic vinegar over the top.
    • Close the sandwich and press gently.
  4. Serve & Enjoy:
    • Slice in half and serve warm!
