Ingredients:
- Queso Mexicano cheese, sliced
- 1 ripe avocado
- 4 slices of crispy bacon
- 1 large tomato, sliced
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
- Salt & black pepper to taste
- Handful of arugula or baby spinach (optional)

- Prep the ingredients::
- Heat a pan over medium heat
- Slice avocado and tomato.
- Heat a pan over medium heat
- Grill the Cheese:
- Heat a grill pan or non-stick skillet over medium-high heat.
- Brush Queso Mexicano slices with olive oil and grill for 2-3 minutes per side until golden brown.
- Remove from heat.
- Assemble the Sandwich:
- Put grilled Queso slice, tomato slices, avocado and arugula/spinach.
- Drizzle balsamic vinegar over the top.
- Close the sandwich and press gently.
- Serve & Enjoy:
- Slice in half and serve warm!
