Portuguese Bruschetta Toast

Ingredients:

For the Bruschetta Topping:

  • 1 medium ripe tomato
  • 1 small garlic clove
  • 1 tbsp extra virgin olive oil (EVOO)
  • 1 tbsp fresh basil, chopped
  • Salt to taste

For the Portuguese St John's Cow Milk Cheese Toast:

Instructions:

1. Prepare the Bruschetta Topping:

  • Dice the tomato into small cubes, removing the seeds if preferred.
  • Grate or crush the garlic clove.
  • In a small bowl, combine the tomato, grated garlic, and 1 tsp of olive oil. Mix well.

2. Prepare the Toast:

  • Toast the slice of sourdough bread until golden and crispy, either in a toaster or on a skillet with a little bit of olive oil or butter for extra crispness.
  • While the bread is toasting, place the Portuguese St John's Cow Milk Cheese in a small food processor and pulse until the cheese is whipped and smooth. Add about 1 tsp olive oil.

3. Assemble the Toast:

  • Layer alternating spoonful's of the whipped cheese mixture and the fresh tomato bruschetta topping onto the warm toasted sourdough.
  • Top with freshly chopped basil, salt, and drizzle with EVOO.
