Lentil Salad with St. John’s Fresh Cheese

Lentil Salad with St. John’s Fresh Cheese

Serves 4



  • 1 can cooked lentils
  • 1 medium red onion, chopped
  • 3 tablespoons chopped parsley
  • 2 tablespoons oregano
  • ¼ cup extra virgin olive oil
  • 1 medium tomato, chopped
  • 1 teaspoon lemon juice
  • salt and black pepper
  • ½ package St. John’s Fresh Cheese
  • Pomegranate  


Drain the can of cooked lentils.  Put the lentils in a sieve and rinse them until the water runs clear beneath them.  Allow the lentils to drain (5 minutes).   Meanwhile in a medium bowl place the chopped onion, parsley, and oregano.   Pour in the olive oil and stir mixture together until well coated.  Add the lentils into the bowl and stir lightly to coat.   Add the tomatoes, lemon juice, and season with salt and pepper. Stir again.  


Cover the mixture with plastic wrap and place in refrigerator for at least one hour.


Before serving, allow the mixture to sit for at least ½ hour. Roughly chop the St. John’s Fresh cheese and sprinkle onto the salad. Toss lightly and serve.
