Fusilli with St. John’s Cheese and Roasted Peppers

Fusilli with St. John’s Cheese and Roasted Peppers

Serves 4

 

Ingredients:

  • 1 lb fusilli pasta
  • 1 tablespoon salt
  • ½ lb. roasted red peppers, sliced
  • 2 tablespoons vegetable oil, for frying
  • 1 medium onion, sliced
  • 1 clove garlic, chopped
  • 2 tablespoons water from the cooked pasta pot
  • ½ package of St. John’s Fresh Cheese 
  • Olives 
  • Cucumbers

 

Direction:

Boil a large pot of water for the fusilli pasta.  When the water begins to boil vigorously, put in salt and then add the pasta.   Boil until pasta is al dente.

 

Meanwhile, in a medium frying pan heat oil to medium-high.  Add the onion and cook until tender, about 5 minutes.  Add the chopped garlic and sauté for another 2 minutes.  Add the roasted red peppers and about two tablespoons of the water from the cooking pasta. Cook for another minute.  Turn off heat.

 

When the pasta is done, drain and return to pot.  Add the vegetable mixture and toss thoroughly.   Crumble the St. John’s Fresh cheese over the mixture, toss lightly and serve.

 

(This dish can be chilled and served cold.)
