These Crispy Chorizo Cheese Tacos are a bold, flavour-packed dish bursting with Mexican-inspired flair. Loaded with creamy Queso Mexicano, melted São Miguel cheese, smoky chorizo, and tangy tomato sauce, they come together in under 10 minutes - perfect for a quick lunch or a casual weeknight dinner.
Ingredients (Serves 2–3)
- 4 small flour tortillas (or soft taco shells)
- ½ cup Queso Mexicano, cubed
- ½ cup shredded São Miguel cheese
- ½ cup tomato sauce
- ½ cup chorizo and bell peppers
- ½ cup onions
- 1 tsp Italian seasoning (Basil, Oregano, Rosemary, Thyme)
- 1 tbsp olive oil

How to Make Crispy Chorizo Cheese Tacos (Step by Step)
1. Cook the filling
Place a skillet over medium heat and add a bit of butter or olive oil. Add the chorizo, bell peppers, onions, Italian seasoning, and cubed Portuguese Cheese Co. Queso Mexicano. Cook for a few minutes, stirring occasionally, until the vegetables soften and the Queso Mexicano begins to warm through.
2. Assemble the taco
Lay a tortilla flat on a cutting board or plate. Spread a thin layer of tomato sauce on one half of the tortilla. Add the warm chorizo and Queso Mexicano mixture, then top with shredded Portuguese Cheese Co. São Miguel.
3. Fold
Fold the tortilla over into a taco shape and press gently.
4. Crisp in the pan
Place the folded taco back into the skillet over medium heat. Cook for 2–3 minutes per side until golden on the outside and the São Miguel is melted inside. Keep an eye on the tortilla so it does not over-brown.
5. Finish
