Serving Size: 5 servings
Ingredients:
- 350g of Spanish Fresh Queso Fresco, shredded
- 1/2 pound chorizo sausage, casing removed
- 300g of tortilla chips
- 1/4 cup chopped fresh cilantro for garnish
- Lime wedges, for serving (optional)
Directions:
- Preheat oven to 350 degrees F.
- Cook the Chorizo: Remove the casing from the sausage(s). In a skillet over medium heat, add the chorizo sausage, breaking it up with a spoon. Cook the chorizo until browned and cooked through, about 8-10 minutes, stirring occasionally.
- Assemble the Nachos: Arrange half the amount of the corn tortilla chips on a oven safe dish.
- Generously sprinkle the shredded Spanish Fresh Queso Fresco over the top the tortilla chips.
- Layer another layer of tortilla chips on top of the cheese.
- Add the crumbled chorizo and remaining cheese.
- Bake for 10-13 minutes until the cheese is melty and just about golden brown. Keep an eye on them, as they can burn quick.
- Garnish with chopped fresh cilantro.
Serve:
Serve the nachos immediately, with lime wedges on the side for squeezing over the top, if desired, and fresh pico de gallo on the side for dipping.
