In this series, we’ll showcase deliciously simple recipes featuring our handmade local ethnic cheeses, starting with Part 1: Portuguese-Style Mac and Cheese.

Indulge in this creamy dish that blends the tangy richness of São Miguel with the smoothness of Corvo cheeses. 

Serving size: 5-6 people as a main dish or 8-10 people as a side dish 

Ingredients:

  • 13 oz of your preferred pasta (we used cavatappi)
  • 2 cups São Miguel cheese, shredded
  • 1 cup Corvo cheese, shredded
  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 1/4 tsp nutmeg powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 2 tbsp olive oil

 

Instructions:
  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  3. Prepare the cheese sauce:
    • In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until it thickens.
    • Slowly whisk in the milk and heavy cream, ensuring a smooth mixture.
    • Add seasonings
    • Gradually stir in the São Miguel and Corvo cheeses, stirring continuously until melted and smooth.
  4. Combine:
    • Mix the cooked pasta with the cheese sauce until evenly coated. Transfer the mixture to a greased baking dish.
  5. Prepare the topping:
    • In a small pan, heat the olive oil and toast the breadcrumbs until golden brown. Sprinkle them evenly over the mac and cheese.
  6. Bake:
    • Bake the mac and cheese, uncovered, for 20 minutes or until bubbly and the breadcrumbs are crispy and golden.
  7. Serve:
    • Serve hot and enjoy!
