Crispy Smashed Potatoes with Portuguese Cheese

Crispy on the outside, tender on the inside, these smashed potatoes are seasoned with garlic and smoked paprika, then topped with melted Vaquinha Portuguese Cheese. Garnished with fresh parsley, they make a flavourful side dish or appetizer. Try them with your favorite gravy for a poutine-inspired twist!

Serving size: 4 people as a side dish or appetizer
Ingredients:
  • 1.5 lbs baby potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 cup grated Vaquinha cheese
  • 2 tbsp chopped fresh parsley for garnish
Directions:
  1. Preheat the Oven:
    • Preheat your oven to 450°F (230°C).
  2. Prepare the Potatoes:
    • Wash the baby potatoes thoroughly. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook for 15-20 minutes or until the potatoes are fork-tender.
  3. Season and smash the Potatoes:
    • Drain the potatoes and let them cool slightly. Place them in a bowl and season generously with olive oil and salt, pepper, garlic powder and smoked paprika. Place them on a baking sheet lined with parchment paper.
    • Using the bottom of a glass or another flat surface, gently smash each potato until it's about 1/2 inch thick.

    *Pro tip: Grease the bottom of your glass so the potato doesn’t stick to it.

  4. Roast:
    • Drizzle the smashed potatoes with more olive oil, and smoked paprika for additional colour and flavour.
    • Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy.
  5. Add Vaquinha Cheese:
    • Remove the baking sheet from the oven and sprinkle the grated Vaquinha Portuguese cheese evenly over the potatoes.
    • Turn on the broiler, and place the baking sheet back in the oven. Broil for 3-5 minutes, or until the cheese is bubbly and melted. Watch carefully to avoid burning.
